I adapted this recipe for cornbread. It's a great, simple gluten free cornbread.

My adaptation for gluten free
2/3 c gluten free flour
2/3 c blanched almond meal
2/3 c corneal
2/3 c sugar
1 TB baking powder
1/2 tsp salt
1 1/4 c milk
2 lrg eggs
1/3 c oil
3 TB melted butter or margarine
Grease an 8x8 pan. Mix dry ingredients. Mix wet ingredients in a seperate bowl. Mix wet into dry- don't over mix!- and pour into pan.
Bake at 350 for 35 minutes.
